There is no reason to be intimidated by, cutting and peeling yuca. Yuca is actually is very easy to work with, but I've had quite a few readers comment to me that they arent sure how to best peel and cut yuca. Its been one year since I began selling my cookbook and am happy to share that we sold over 1000 copies in the first year!!
