Black Beans (cook in an Instant Pot)

One of the main elements in the Costa Rican diet are beans, with black and red beans being the most popular. In my house, you always go to find black beans, in my refrigerator, or the freezer. I love having frozen small portions that I can easily defrost when I need to make gallo pinto.

I prefer black beans and I cook one pound of beans every week to use during the week. I love to eat it as a soup, in gallo pinto or as refried beans, and as a side dish in many of my meals.

This recipe is adapted to cook in the Instant Pot, but you can also cook it in a conventional pressure cooker, only, it increases the cooking time to 45min.

Black Beans (frijoles negros)

​400g dry black beans pre soak in water for 8 to 12 hours
1 big onion chopped

1 green-red pepper chopped
1/3 cup chopped celery
4 garlic cloves minced
1 1/2 tsp ground cumin
1 tbsp dry oregano
1 1/2 tsp salt
2 tsp ground pepper
5 cups of water

Add all the ingredients in the Instant pot, Lock the lid on and set the Instant Pot to High Pressure for 35 minutes. Once the beans are done cooking, let the pressure release naturally for 20 minutes before releasing the remaining pressure. Open and serve! 
Let the beans get cool completely before saving them in the fridge or freezer.

If using a regular pressure cooker do you use the same amount of water as in this recipe, 5 cups ?

I will use 6 cups of water and cook it for 45 min.

Answer: Black beans are a legume, and because of the lectin in their outer layer, they require a specific method to cook them properly otherwise they can cause an allergic reaction.
    
First off, it's important to note that you should store  black beans in your refrigerator rather than on your countertop. They'll stay fresher up to 10 times longer
You want to rinse them three times with water before you soak them overnight
Then after soaking, use the black bean setting on an Instant Pot for 23 minutes -- do not add liquid or salt or seasonings. Dry-toast cumin seeds if desired before cooking black beans in an Instant Pot for 23 minutes.
